Serves 4-5.
Ingredients:
- 2 Tbsp olive oil
- 1 large onion, chopped
- 1 c carrots, finely chopped
- 1 c celery, chopped
- 1 tsp cumin seeds
- 2 tomatoes, finely chopped (or 1 c canned crushed tomatoes)
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp chili powder
- 2 c cooked soybeans in cooking liquid
- 2 c vegetarian chicken style broth
- 1 tsp garam masala
- 1/2 tsp ginger powder
- salt to taste
Directions:
- In large pot on medium heat, warm olive oil.
- Add onions, carrots and celery. Saute 10 minutes.
- Add cumin seeds; saute another minute.
- Add tomatoes, coriander, turmeric, soybeans and broth.
- Bring to simmer; reduce heat, cover, simmer 30 minutes.
- Add garam masala, ginger and salt to taste. Cook one minute more. Serve hot.
