Soothing Soybean Soup

Serves 4-5.

Ingredients:

  • 2 Tbsp olive oil
  • 1 large onion, chopped
  • 1 c carrots, finely chopped
  • 1 c celery, chopped
  • 1 tsp cumin seeds
  • 2 tomatoes, finely chopped (or 1 c canned crushed tomatoes)
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 2 c cooked soybeans in cooking liquid
  • 2 c vegetarian chicken style broth
  • 1 tsp garam masala
  • 1/2 tsp ginger powder
  • salt to taste

Directions:

  1. In large pot on medium heat, warm olive oil.
  2. Add onions, carrots and celery. Saute 10 minutes.
  3. Add cumin seeds; saute another minute.
  4. Add tomatoes, coriander, turmeric, soybeans and broth.
  5. Bring to simmer; reduce heat, cover, simmer 30 minutes.
  6. Add garam masala, ginger and salt to taste. Cook one minute more. Serve hot.
