Serves 4.
Ingredients:
- 1 Tbsp butter or margarine
- 1 Tbsp vegetable oil
- 2 stalks celery, chopped
- 1/2 medium onion, chopped
- 2 cloves garlic, minced
- 4 c vegetable broth
- 2 c cabbage, chopped
- 1/2 c parsley, chopped
- 1 medium zucchini, finely diced
- 2 Tbsp tomato paste
- 1/2 tsp dry basil
- 1/2 tsp dry thyme
- 1/2 tsp salt (or to taste)
- 1/4 tsp pepper
Directions:
- In a medium, heavy pot, melt the butter in the oil over medium heat.
- Add celery and onion; sauté 3 minutes.
- Add garlic; sauté another minute.
- Pour in the broth, cabbage, parsley, zucchini, tomato paste, basil, thyme, salt and pepper. Stir and bring to a simmer.
- Cover, reduce heat to low, and simmer 20 minutes. Serve hot.
