Garden Vegetable Soup

Serves 4.

Ingredients:

  • 1 Tbsp butter or margarine
  • 1 Tbsp vegetable oil
  • 2 stalks celery, chopped
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 c vegetable broth
  • 2 c cabbage, chopped
  • 1/2 c parsley, chopped
  • 1 medium zucchini, finely diced
  • 2 Tbsp tomato paste
  • 1/2 tsp dry basil
  • 1/2 tsp dry thyme
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp pepper

Directions:

  1. In a medium, heavy pot, melt the butter in the oil over medium heat.
  2. Add celery and onion; sauté 3 minutes.
  3. Add garlic; sauté another minute.
  4. Pour in the broth, cabbage, parsley, zucchini, tomato paste, basil, thyme, salt and pepper. Stir and bring to a simmer.
  5. Cover, reduce heat to low, and simmer 20 minutes. Serve hot.
