This sauce is so very easy to make, and it takes vegetarian sandwiches or pasta dishes to a whole new level!
Makes 1/2 cup.
- 2 Tbsp pine nuts, ground
- 5 Tbsp olive oil
- 2 Tbsp capers
- 1 c tightly packed basil leaves
- 1/3 c grated Parmesan cheese
- 2 cloves garlic, chopped
- 1/4 tsp salt
- Place all ingredients in a food processor or blender and pulse/process until pureed.
- Chill until served. Use one tablespoon per sandwich. For a pasta dish, dilute with a tablespoon or two of pasta cooking water before adding to cooked pasta and tossing well.
