Apricot Vinaigrette

Apricot Salad Dressing

Use this lightly sweet dressing on fruit salads or green salads, such as my Swiss Chard Salad. It makes an everyday salad taste special.

Makes about 1/3 cup.


  • 2 Tbsp apricot preserves or jam
  • 1 Tbsp red wine vinegar
  • 2 Tbsp olive oil
  • 1/8 tsp dry marjoram leaves
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper


  1. Place all ingredients in a blender and process until smooth and creamy.
  2. Serve on green or fruit salads. Place unused portion in tightly sealed container and refrigerate for up to 4 days.
