Mandarin Cucumber Salad

Mandarin Cucumber SaladCalifornia Mandarin oranges taste like very sweet little tangerines … but without the seeds! I love them, especially in this wonderful salad!

Serves 4.

Ingredients:

  • 1 large cucumber
  • 6 California mandarin oranges
  • 1/2 brown onion
  • 1 Tbsp olive oil
  • 1/4 c white wine vinegar
  • (1) .035 oz packet stevia or 2 tsp sugar
  • 1/4 tsp aniseed
  • 1/2 tsp sea salt

Directions:

Peel and thinly slice the cucumber. Peel and section the mandarin oranges. Thinly slice the onion and cut the rings in half. Add the cucumbers, mandarin oranges and onions to a large bowl and toss. In a small bowl or jar, whisk together the remaining ingredients. Pour over the salad and toss. Serve at once, or for best results, chill one hour before serving.
