California Mandarin oranges taste like very sweet little tangerines … but without the seeds! I love them, especially in this wonderful salad!
Serves 4.
Ingredients:
- 1 large cucumber
- 6 California mandarin oranges
- 1/2 brown onion
- 1 Tbsp olive oil
- 1/4 c white wine vinegar
- (1) .035 oz packet stevia or 2 tsp sugar
- 1/4 tsp aniseed
- 1/2 tsp sea salt
Directions:
Peel and thinly slice the cucumber. Peel and section the mandarin oranges. Thinly slice the onion and cut the rings in half. Add the cucumbers, mandarin oranges and onions to a large bowl and toss. In a small bowl or jar, whisk together the remaining ingredients. Pour over the salad and toss. Serve at once, or for best results, chill one hour before serving.
