Indian Cucumber Salad

My daughter Omara developed this recipe, and it is a low calorie, refreshing salad, especially nice with a spicy Indian curry!

Serves 6-7.


  • 1 c sweet salad tomatoes, diced
  • 1/2 c red onion, diced
  • 4 Persian cucumbers, diced
  • 1/2-1 Habanero chili, minced
  • 1/2 c cilantro, chopped
  • salt to taste
  • 1/8 tsp chili powder
  • 1/4 tsp cumin
  • 1/2 lime, juiced


  1. In a large bowl, toss together the tomatoes, onion, cucumbers, Habanero chili, and cilantro.
  2. Add salt, chili powder, cumin and lime juice; blend well.
  3. Refrigerate at least 4 hours. Drain any liquid that forms in the bottom of the bowl. Check for seasoning and serve chilled.
