My daughter Omara developed this recipe, and it is a low calorie, refreshing salad, especially nice with a spicy Indian curry!
Serves 6-7.
Ingredients:
- 1 c sweet salad tomatoes, diced
- 1/2 c red onion, diced
- 4 Persian cucumbers, diced
- 1/2-1 Habanero chili, minced
- 1/2 c cilantro, chopped
- salt to taste
- 1/8 tsp chili powder
- 1/4 tsp cumin
- 1/2 lime, juiced
Directions:
- In a large bowl, toss together the tomatoes, onion, cucumbers, Habanero chili, and cilantro.
- Add salt, chili powder, cumin and lime juice; blend well.
- Refrigerate at least 4 hours. Drain any liquid that forms in the bottom of the bowl. Check for seasoning and serve chilled.
