Carrot Peanut Salad

Carrot Peanut Salad This Asian style salad is great for a picnic or buffet and holds very well. Because it is high in protein, it can serve as a main luncheon salad.

Ingredients:

Salad:

  • 8 medium carrots
  • 1/2 c green onions, sliced
  • 1/2 c Spanish peanuts
  • Tahini dressing (below)

Dressing:

  • 2 Tbsp tahini
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp soy sauce
  • 1 Tbsp rice vinegar
  • 1 1/2 tsp sugar
  • 1/4 tsp granulated garlic
  • 1/8 tsp white pepper

Directions:

Salad:

  1. Peel and shred the carrots on a box grater.
  2. Place in a medium covered bowl.
  3. Add the sliced green onions and Spanish peanuts.
  4. Stir in all of the dressing or as much as you prefer.
  5. Refrigerate until served.

Dressing:

  1. In a small bottle with a tight lid, pour in all ingredients, seal, and shake until smooth.
