This Asian style salad is great for a picnic or buffet and holds very well. Because it is high in protein, it can serve as a main luncheon salad.
Ingredients:
Salad:
- 8 medium carrots
- 1/2 c green onions, sliced
- 1/2 c Spanish peanuts
- Tahini dressing (below)
Dressing:
- 2 Tbsp tahini
- 2 Tbsp extra virgin olive oil
- 2 Tbsp soy sauce
- 1 Tbsp rice vinegar
- 1 1/2 tsp sugar
- 1/4 tsp granulated garlic
- 1/8 tsp white pepper
Directions:
Salad:
- Peel and shred the carrots on a box grater.
- Place in a medium covered bowl.
- Add the sliced green onions and Spanish peanuts.
- Stir in all of the dressing or as much as you prefer.
- Refrigerate until served.
Dressing:
- In a small bottle with a tight lid, pour in all ingredients, seal, and shake until smooth.
