Vegetarian Rice of the Poor

Vegetarian Rice of the Poor Arroz a lo Pobre, or Rice of the Poor, is an economical dish that can be doubled and tripled for a crowd. Use Yves Meatless Chicken Strips or your favorite homemade seitan strips for this dish.

Serves 4-5.


  • 2 Tbsp olive oil
  • 1/2 red or orange pepper, cut in matchsticks
  • 1/2 poblano chili, cut in matchsticks
  • 3-4 oz seitan strips
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 plum tomatoes, diced
  • 1 c dry long-grain rice
  • 2 c vegetarian chicken style broth
  • 1/2 c black beans, rinsed and drained
  • 1/2 c garbanzo beans, rinsed and drained
  • 1 c frozen peas and carrots
  • 1 Tbsp tomato paste
  • 1 bay leaf
  • 1/2 tsp dry basil
  • 1/4 tsp dry rosemary
  • 1/4 tsp dry oregano
  • 1/4 tsp sea salt
  • 1/8 tsp coarse black pepper


  1. In a large pot or skillet over medium heat, warm the olive oil. Add red pepper strips, poblano chili, and seitan. Brown a few minutes. Remove from heat with slotted spoon and cover to keep warm.
  2. In same pot, saute onion and garlic 2 minutes. Add tomatoes and rice and stir to coat well.
  3. Add remaining ingredients (except the seitan mixture) and bring to simmering. Stir, reduce heat to low, cover, and simmer 18 minutes.
  4. Transfer to a serving bowl or serve in pot/skillet. Place some the red pepper, poblano and seitan strips in a pleasing pattern on top. Serve hot, adding some of the remaining seitan mixture to each serving.
