Corn tortillas are inexpensive and readily available. Why buy a tortilla press and make your own? Because they are so much better tasting, and so much fresher! I just bought an 8″ Victoria cast iron tortilla press made in Columbia by the IMUSA company. It is seasoned and ready to go. I recommend Maseca Masa Mix and the following directions: Preheat a griddle or heavy skillet on medium heat. Using just water and the masa mix, form the tortilla dough, following package directions. Roll balls of dough that are about the size of golf balls in your palms. Line the tortilla press with a ziplock bag that has been cut open on two sides, placing the uncut side of the bag at the hinge side of the press. Place one dough ball in the press, and close the top. Use gentle pressure on the press handle to flatten the dough into a disc. Unwrap and place the tortilla on the preheated griddle for a minute or two. Turn and cook another minute or until slightly browned on edges. Repeat with all the dough. Stack tortillas on a plate and use immediately, or cool and wrap tightly for later use.
