This is the time of year when I grab a garden basket and search for dandelion greens in the yard. Fortunately, we have a wealth of these nutritious vegetables at this time of year. I select them from our enclosed vegetable garden, where I know cats and other critters have not been through. I wash them “in 5 waters”, as the Italians would say. Then I soak them in a vegetable wash and rinse once again. You can buy veggie wash at most markets, or simply make your own with one-half white distilled vinegar and one-half water. Soak fruits and vegetables a minute or two, then rinse thoroughly. This keeps the vegetables fresher longer.
