These tasty meatballs go well with marina sauce, spaghetti, or in meatball sandwiches. So easy and high in protein!
Makes about 22 (1 1/2 inch) meatballs.
Ingredients:
- 3 Tbsp olive oil
- 1 (15 oz) can Loma Linda Vegetarian Burger
- 1 c Italian flavored bread crumbs
- 2 large eggs
Directions:
- Preheat oven to 300 degrees F.
- Drizzle olive oil on a large baking sheet.
- In large bowl, place Vegetarian Burger, Italian bread crumbs and eggs.
- Use clean hands to thoroughly mix.
- Scoop up 2-3 tablespoonfuls of the mix. Roll in the palms of your hands to make a round meatball.
- Place meatball on prepared baking sheet. Repeat with remaining mixture.
- Roll each meatball in the olive oil on the baking sheet, covering all surfaces. Evenly space the meatballs on the sheet.
- Bake 15 minutes. Remove from oven. Use metal spatula to turn each meatball over.
- Place meatballs back in oven for another 15-20 minutes.
- Serve hot or cold.
