Loaded with high quality protein, these economical burgers are perfect for a large family. They freeze well for reheating later, too.
Makes about 12 medium burgers.
Ingredients:
- 3 medium carrots
- 3 c cooked soybeans
- 1/2 c fine Italian dry breadcrumbs
- 1/2 c parsley, chopped
- 1 Tbsp dry minced onion
- 1 1/2 tsp Italian seasoning
- 1 1/4 tsp salt
- 1/2 tsp black pepper, ground
- 2 eggs
- 1/4 c olive oil (plus more for the griddle)
Directions:
- Peel and chop carrots. Add to a full-sized food processor and process until shredded.
- Add soybeans and process until well ground.
- Add remaining ingredients and continue to pulse and process until quite finely ground. Remove batter by 1/3 cups and form into patty shapes with hands.
- Heat griddle or large heavy skillet to 400 degrees F. Coat griddle with a tablespoon or two of oil and grill the patties for about 10 minutes, turning over several times and pressing down slightly with spatula. Burgers are done when they are firm and golden brown. Serve in buns with tomatoes, lettuce, and mayonnaise. These burgers are also good as a main dinner entree, served with tartar sauce and a side of potatoes.
