This easy recipe utilizes TVP granules, also known as soy bits/mince. Textured Vegetable Protein is rich in protein. Use this filling for tacos, taco salad, and other Mexican dishes.
Makes about 6 cups
Ingredients:
- 1 c TVP (textured vegetable protein) dry granules
- 3/4 c boiling water
- 1 (28 oz) can diced tomatoes with their juice
- 1 medium onion, minced
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 2-3 Tbsp mild chili powder
- 1 tsp ground cumin
- 1 tsp oregano
- 1/2 tsp dry cilantro
- 1/2 tsp salt
Directions:
- In a 2-quart or larger heavy pot, soak the TVP in the boiling water 10 minutes, stirring a couple of times.
- Place in a fine strainer or cheesecloth lined colander and rinse well. Strain and squeeze nearly dry. Return to pot.
- To the pot, add remaining ingredients and stir well. Place on medium heat and bring to a boil.
- Reduce heat to lowest setting and partially cover. Simmer 30 minutes, stirring occasionally. When most of the liquid has been absorbed, the filling is done. Use in your favorite recipes.
