Veggie Frank Skillet

This quick and easy stove-top meal is perfect for a busy family. Children will love this nutritious dish!

Serves 6.


  • 1 Tbsp butter or margarine
  • 1 small onion, chopped
  • 4 vegetarian wieners, sliced
  • 1 (14-15 oz) can diced tomatoes with juice
  • 1 c tomato juice
  • 1 c water
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/2 tsp dry marjoram
  • 1/4 tsp dry basil
  • 4 oz dry elbow macaroni
  • 1 bell pepper, cut in strips


  1. In a large skillet over medium heat, melt the butter and add onion. Sauté 3 minutes.
  2. Add veggie dogs, diced tomatoes with their juice, tomato juice, water, garlic, salt, pepper, marjoram, and basil. Bring to a boil.
  3. Add elbow macaroni and stir. Reduce heat, cover, and simmer on low for 10 minutes, stirring once midway.
  4. Stir. Add bell pepper strips. Cover and simmer another 3 minutes. Serve hot.
