Roasted Turnips and Apples

Roasted Turnips and Apples I have found that many root vegetables taste better when roasted. Turnips are no exception, and the touch of lime and honey brings out the caramelized flavor of this dish.

Serves 4.

Ingredients:

  • 1 medium turnip
  • 1 medium baking apple
  • 2 Tbsp warmed honey or maple syrup
  • 1 Tbsp lime juice
  • 1 Tbsp olive oil (plus more for baking sheet)
  • 1/4 tsp sea salt
  • dash coarse black pepper

Directions:

  1. Preheat oven to 425 degrees F and generously oil a 9″ pie pan or 8 X 8 X 2 inch baking dish.
  2. Remove a thin slice off the top and bottom of the unpeeled turnip, cut in half lengthwise, and then cut crosswise in 1/4 inch semi-circles. Similarly, remove thin slice off top and bottom of apple, cut in half lengthwise, and remove core with a melon baller or spoon. Cut 1/3 inch semi-circles crosswise.
  3. Place the turnips and apples in the prepared baking pan in a pinwheel pattern for circular pans or in 2-3 rows for rectangular ones. Alternate apples and turnips, overlapping them a bit.
  4. In a small bowl, blend the honey, lime juice, olive oil, salt, and pepper until you have a smooth marinade. Drizzle marinade evenly over the top of the turnips and apples.
  5. Roast 45 minutes, basting every 15 minutes, until well-browned and tender. Allow to stand a few minutes to absorb the marinade before serving.
