Quick and Easy Chili Bean Terkettes

Serves 2-3.

Ingredients:

  • 1 Tbsp grapeseed oil
  • 10 oz seitan, cut in bite-sized pieces
  • 5 green onions, sliced
  • 1/2 red bell pepper, chopped
  • 1 clove garlic, minced
  • 1 c canned chili beans with liquid
  • 1/2 c cheddar cheese, shredded

Directions:

  1. Heat the oil in a large skillet.
  2. Add the seitan and brown it.
  3. Add the onion, bell pepper and garlic.
  4. Saute until barely tender.
  5. Add the chili beans and heat through.
  6. Serve topped with cheddar cheese.
