Serves 2-3.
Ingredients:
- 1 Tbsp grapeseed oil
- 10 oz Terkettes or seitan
- 5 green onions, sliced
- 1/2 red bell pepper, chopped
- 1 clove garlic, minced
- 1 c canned chili beans with liquid
- 1/2 c cheddar cheese, shredded
Directions:
- Heat the oil in a large skillet.
- Add the Terkettes and brown them.
- Add the onion, bell pepper and garlic.
- Saute until barely tender.
- Add the chili beans and heat through.
- Serve topped with cheddar cheese.
