Nabulsi Cheese Eggplant

Nabulsi cheese is a white brined cheese from the Mediterranean region. Its delicate flavor and texture lend themselves beautifully to this baked eggplant dish.

Serves 4-5.


  • 1 Tbsp olive oil
  • 1 medium globe eggplant
  • 2 c marinara or spaghetti sauce
  • 8 oz Nabulsi Cheese, sliced
  • 2 Tbsp grated Parmesan cheese


  1. Preheat oven to 375 degrees F. Oil one 12″ pizza pan or (2) 8″ cake pans.
  2. Leaving peel on, cut eggplant lengthwise, then in 1/2 inch thick slices.
  3. Arrange eggplant slices in the prepared pan(s).
  4. Place cheese slice on each eggplant slice. Spoon sauce on top of each.
  5. Sprinkle the Parmesan Cheese on top and bake 30 minutes. Serve hot with Italian bread.
