Nabulsi cheese is a white brined cheese from the Mediterranean region. Its delicate flavor and texture lend themselves beautifully to this baked eggplant dish.
Serves 4-5.
Ingredients:
- 1 Tbsp olive oil
- 1 medium globe eggplant
- 2 c marinara or spaghetti sauce
- 8 oz Nabulsi Cheese, sliced
- 2 Tbsp grated Parmesan cheese
Directions:
- Preheat oven to 375 degrees F. Oil one 12″ pizza pan or (2) 8″ cake pans.
- Leaving peel on, cut eggplant lengthwise, then in 1/2 inch thick slices.
- Arrange eggplant slices in the prepared pan(s).
- Place cheese slice on each eggplant slice. Spoon sauce on top of each.
- Sprinkle the Parmesan Cheese on top and bake 30 minutes. Serve hot with Italian bread.
