This is a great way to use over-ripe bananas without adding too much fat and sugar to your diet. The snack cakes are good for a lunch box treat, snack, or quick breakfast.
Serves 8.
Ingredients:
- 1/2 C whole wheat flour
- 1/2 C all purpose flour
- 1/3 C packed brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 2 large very ripe bananas
- 1/4 C sour cream
- 1 egg
- 1 tsp vanilla
- 1/2 c broken walnuts (optional)
Directions:
- Preheat oven to 350 F.
- Spray or butter a 11X6″ baking pan well.
- Mix dry ingredients and put through a sifter.
- Mash bananas with a fork and mix in sour cream, egg, and vanilla until the wet ingredients are well incorporated.
- Blend wet and dry ingredients briefly. Add walnuts if desired. Do not over-mix.
- Spoon thick batter into pan and spread evenly.
- Bake about 25-30 minutes.
- Cool on rack before cutting into squares.
