Lowfat Banana Snack Cake

Lowfat Banana Snack Cake This is a great way to use over-ripe bananas without adding too much fat and sugar to your diet. The snack cakes are good for a lunch box treat, snack, or quick breakfast.

Serves 8.

Ingredients:

  • 1/2 C whole wheat flour
  • 1/2 C all purpose flour
  • 1/3 C packed brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 large very ripe bananas
  • 1/4 C sour cream
  • 1 egg
  • 1 tsp vanilla
  • 1/2 c broken walnuts (optional)

Directions:

  1. Preheat oven to 350 F.
  2. Spray or butter a 11X6″ baking pan well.
  3. Mix dry ingredients and put through a sifter.
  4. Mash bananas with a fork and mix in sour cream, egg, and vanilla until the wet ingredients are well incorporated.
  5. Blend wet and dry ingredients briefly. Add walnuts if desired. Do not over-mix.
  6. Spoon thick batter into pan and spread evenly.
  7. Bake about 25-30 minutes.
  8. Cool on rack before cutting into squares.
