This is a light, healthy dessert or breakfast side dish made with sweet eating apples and a natural sweetener known as ‘stevia’. We used (2) one-gram (.035 oz) packets of stevia in this recipe or a rounded 1/8 teaspoon of the powdered variety. If you have the liquid stevia, use 4-6 drops.
Serves 4.
Ingredients:
- 1/2 c water
- 2 1/2 Tbsp lime juice
- 2 Tbsp olive oil
- 2 packets stevia (.35 oz each) (see above for equivalents)
- 2 Tbsp packed brown sugar
- 1/4 tsp ground cardamom
- 1/8 tsp ground cloves
- 1/8 tsp sea salt
- 1/8 tsp rum extract (or vanilla)
- 4-5 c sweet apples, peeled, cored and cut in large pieces*
- 1 tsp corn starch dissolved in 1/3 c water
Directions:
- In a large skillet or heavy pot, stir the water, lime juice, olive oil, brown sugar, stevia, cardamom, cloves, salt and rum extract until all is dissolved.
- Add the apples and bring to simmering over medium low heat. Reduce heat to low, cover, and simmer 8 minutes.
- Add the corn starch solution and stir until it simmers and thickens. Turn off flame, cover, and allow to stand 15 minutes. Transfer to a serving bowl and serve hot, warm or cold.
If using small apples, quarter them. For larger apples, cut them in 6-8 pieces.
