“The Pub” is a restaurant located in the Monte Carlo Resort and Casino in downtown Las Vegas, Nevada. They have provided the inspiration for these luscious pancakes served with Cream Cheese Maple Topping,
Makes 8 medium pancakes.
Ingredients:
Cream Cheese Maple Topping:
- 8 oz cream cheese, softened
- 1/4 c maple syrup
- 1/4 c buttery spread or softened butter
Carrot Cake Pancake Batter:
- 2 eggs, lightly beaten
- 1 c buttermilk
- 1 c carrots, finely shredded
- 1/4 c maple syrup
- 2 tsp vanilla extract
- 1 c all purpose flour
- 2 tsp baking powder
- 1/8 tsp salt
- 1/2 c chopped almonds
Directions:
- In a large bowl, blend the beaten egg, buttermilk, shredded carrots, maple syrup, and vanilla until smooth.
- In a smaller bowl, stir together the flour, baking powder and salt. Add these dry ingredients to the large bowl of wet ingredients, and blend just until incorporated. Fold in nuts.
- Preheat griddle to medium heat or about 325 degrees F. Lightly butter surface of griddle and drop batter by 1/3 cup measures. Cook until bubbles appear on top of pancakes and edges set up. Flip and cook briefly or until firm when touched lightly on top.
- Transfer to serving plates and top with the Cream Cheese Maple Topping. Garnish with more shredded carrots and chopped nuts. Serve immediately.
