Vegetarian-Swedish-Meatballs

Years ago I took a cooking course at an Adventist community center, and this recipe for Swedish meatballs is one of the Adventist recipes I learned. I have clarified my original post a bit.

Makes about 24 (1″) meatballs.

Ingredients:

  • 1 c fine dry breadcrumbs
  • 1/2 c walnuts, finely chopped
  • 1 tsp basil
  • 1/2 tsp thyme
  • 1/2 tsp nutmeg
  • 4 eggs
  • 1/2 c cottage cheese
  • 1/2 c cheddar cheese, shredded
  • 1-10 oz can condensed cream of mushroom soup
  • 1/2 c milk
  • 1 tsp soy sauce

Directions:

  1. Preheat oven to 350 degrees F and oil an 11 x 7 x 2″ baking dish.
  2. In a medium bowl, mix breadcrumbs, walnuts, basil, thyme, and nutmeg.
  3. In a large bowl, lightly beat eggs. Add cottage cheese and cheddar cheese.
  4. Add the breadcrumb mixture and blend well.
  5. Using clean hands, form 24 meatballs that are about a 1 1/2 inch in diameter; place them in the prepared baking dish (close together, but not touching.)
  6. Whisk together the condensed mushroom soup, milk and soy sauce until smooth. Pour evenly over the meatballs.
  7. Bake uncovered for 40 minutes. Serve hot or warm.
