Egg and Olive Spirals

Egg and Olive Spirals Use fresh whole wheat tortillas or wrap tortillas for this recipe. For an extra special taste treat, use my easy recipe for whole wheat tortillas.

Serves 4.


  • 5 hard-boiled eggs, peeled
  • 2 Tbsp mayonnaise
  • 2 Tbsp green salad olives with pimientos, finely chopped
  • 1 tsp yellow mustard
  • 1/4 tsp celery seed
  • 1/4 tsp turmeric
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper
  • 4 whole wheat tortillas
  • 4 lettuce leaves
  • 1/4 c carrots, shredded
  • 1/4 c black olives, sliced


  1. Place hard boiled eggs in a medium bowl and, using a pastry cutter or fork, chop the eggs finely.
  2. Stir in the mayonnaise, well-drained green olives, mustard, celery seed, turmeric, salt and pepper.
  3. Spread 1/4 of the egg mixture in a long row down the center of each tortilla. Top it it with lettuce leaves, shredded carrots, and sliced black olives.
  4. Roll the wraps into tight “logs”. Cut in 1/2-3/4 inch slices. Lay the spiral slices on a serving platter and serve chilled.
