Keto Chocolate Balls

These little Keto treats are very satisfying and very easy to make. I mix them with an electric mixer, but they can also be made by hand. Just be sure to use softened butter and softened cream cheese to save elbow grease.

Makes 22-24 chocolate balls.

Ingredients:

  • 1/3 c butter, softened
  • 1/3 c cream cheese, softened
  • 1 tsp almond extract
  • 1 1/2 c almond flour
  • 1/4 c unsweetened Dutch process cocoa powder
  • 1/3 c monk fruit sweetener
  • 1/8 tsp salt (slightly more if using unsalted butter)

Directions:

  1. Preheat oven to 350 degrees F and line baking sheet(s) with parchment paper.
  2. With an electric mixer, cream butter and cream cheese.
  3. Add remaining ingredients; blend on lowest setting 3 minutes.or until dry ingredients are incorporated.
  4. Gradually increase mixer speed to high speed; mix a few minutes, or until the dough comes together.
  5. Scrape sides of bowl. With clean hands, knead dough in bowl briefly.
  6. Break off bits of dough and roll them between your palms, making balls slightly larger than 1″.
  7. Place the balls 1″ apart on the parchment lined sheet(s).
  8. Bake 10 minutes. Allow to cool on baking sheet(s) 10 minutes before transferring them to a wire rack.
  9. Cool completely. Store in a tightly sealed container.
