Bean Curd in Cheese Sauce

Dry bean curd is a great vegetarian protein source to have on hand. It comes in many shapes and sizes, but I have used the sticks to make this recipe more like a pasta dish. This may work out well for a Keto diet, though you may have to substitute another thickener for the flour.

Serves 1-2.

Ingredients:

  • 2-3 oz dry bean curd sticks
  • 1 Tbsp butter
  • 1 Tbsp all purpose flour
  • 1/2 c milk
  • 1/2 c shredded cheddar cheese

Directions:

  1. Place dry bean curd strips in a bowl and cover with water. Soak 2 hours or more. Drain and set aside.
  2. In medium saucepan, melt butter over medium heat. Stir in flour.
  3. Continue stirring one minute.
  4. Gradually add milk, stirring until smooth; continue stirring another minute to eliminate raw flour taste.
  5. Add cheese and stir until melted.
  6. Gently stir in bean curd strips and cook until heated through.
  7. Serve hot sprinkled with minced parsley.
