Chipotle Hot Sauce

This is a very spicy hot sauce, though if you want a milder sauce, you may remove the seeds and membranes of the jarred chipotle peppers. The flavor is wonderful on burritos, eggs, and various Mexican dishes.

Makes 1 pint.

Ingredients:

  • 2 tsp olive oil
  • 1/4 medium onion, chopped
  • 1 clove garlic, minced
  • 1 (3.7 oz) can Chipotle Peppers in Adobe Sauce
  • 1/2 c water
  • 2 Tbsp white distilled vinegar
  • 2 small mandarin oranges, pitted, peeled
  • 1 tsp Mexican oregano
  • 1/4 tsp ground cumin
  • 1/4 tsp salt

Directions:

  1. In a small skillet over medium low, warm the olive oil. Add onions; saute 3 minutes. Stir in the minced garlic; saute another minute.
  2. Add skillet mixture to an electric blender. Pour in the contents of the can of Chipotle Peppers in Adobe Sauce.
  3. Add water, vinegar, mandarin oranges, Mexican oregano, cumin, and salt.
  4. Process blender mixture until very smooth. Transfer to bottle or refrigerator container. Store in refrigerator. Use with 2 weeks.
