Garlicky Green Beans

Many varieties of green beans do not have tough strings, so you may not need to de-string them. You will need a steamer, though, for this recipe. Steaming preserves the vivid color and flavor of the green beans.

Ingredients:

  • 8 oz fresh green beans
  • 1 Tbsp olive oil
  • 3 cloves garlic, thinly sliced
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • pinch crushed red pepper

Directions:

  1. Trim stem ends of green beans. Pull off strings (if any).
  2. Bring 1-2 inches water to boil in bottom of steamer.
  3. Add green beans to top “colander part” of steamer. Cover and steam on medium heat 15 minutes or until just tender.
  4. Heat olive oil in a large skillet on medium-low setting. Add drained, cooked green beans, garlic, salt, and pepper. Saute about 2 minutes, with care not to burn garlic.
  5. Remove to serving plate and sprinkle with crushed red pepper. Serve hot or at room temperature.
