This is a good high protein dish for vegetarians, especially those on a Keto Diet. The Keto Tartar Sauce uses dill relish rather than sweet pickle relish and Stevia to brighten the flavor.
Makes about 14 (2 1/2 inch) patties.
Ingredients:
Soybeans Patties:
- 1 Tbsp olive oil
- 1/2 medium onion, chopped
- 1 stalk celery, chopped
- 1 clove garlic, sliced
- 1 medium carrot, peeled, sliced
- 1 1/2 c cooked soybeans, drained
- 1/4 c fresh parsley
- 3/4 c flaxseed meal
- 1/4 tsp basil
- 3/4 tsp vegetable salt (or to taste)
- 1/4 tsp pepper
- 1 large egg
Keto Tartar Sauce
- 1/4 c mayonnaise
- 4 tsp dill relish
- 1-2 pinches pure Bolivian Stevia
Directions:
Soybean Patties:
- In a medium skillet over medium low heat, warm the olive oil Add onion and celery; sauté 4 minutes. Add garlic; sauté another minute. Set aside.
- Place carrots in food processor. Pulse until grated.
- To food processor, add soybeans, parsley, flaxseed meal, basil, vegetable salt, pepper, egg, and sauteed vegetables. Pulse until well blended and uniform in consistency.
- Preheat oven to 375 degrees F. Line a large baking sheet with parchment paper.
- Drop batter by rounded tablespoon onto parchment paper. Flatten and shape with spoon into patties. Repeat with remaining batter, leaving an inch between each patty.
- Bake 8 minutes. Turn patties over and bake about 8 minutes or until firm and browned.
Tartar Sauce:
- In a small bowl, mix together the mayonnaise, dill relish and Stevia until smooth.
- Serve cold with patties. Refrigerate any leftover sauce.
