Serves 2.
Ingredients:
- 2 Tbsp butter
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 (15 oz) can black eyed peas with liquid
- 1 Tbsp brown sugar, packed
- 1/4 c parsley, minced
- 1/2 tsp salt
- 1/4 tsp pepper
Directions:
- In a medium, heavy pot over low heat, melt the butter.
- Add onions and saute 5 minutes. Add garlic; saute another minute.
- Turn the heat up to medium. Stir in the black eyed peas with the thick packing liquid. Add brown sugar, parsley, salt and pepper.
- Bring to simmer; reduce heat to lowest setting. Simmer 10 minutes, stirring frequently.
- Serve hot.
