Simply Delicious Black Eyed Peas

Serves 2.


  • 2 Tbsp butter
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 (15 oz) can black eyed peas with liquid
  • 1 Tbsp brown sugar, packed
  • 1/4 c parsley, minced
  • 1/2 tsp salt
  • 1/4 tsp pepper


  1. In a medium, heavy pot over low heat, melt the butter.
  2. Add onions and saute 5 minutes. Add garlic; saute another minute.
  3. Turn the heat up to medium. Stir in the black eyed peas with the thick packing liquid. Add brown sugar, parsley, salt and pepper.
  4. Bring to simmer; reduce heat to lowest setting. Simmer 10 minutes, stirring frequently.
  5. Serve hot.
