Stevia is an all-natural sweetener which we like to use in combination with other sweeteners. We happen to have the powdered variety in packet form, and used (3) one-gram (.035 oz) packets in this recipe, or a total of 1/4 teaspoon of the powdered product. If you have the liquid stevia, use 6-9 drops. This recipe is not only low in sugar, but has no fat, other than the small amount in the low-fat baking mix. One generous serving of this dessert is about 200 calories (without whipped topping).
Makes 10 servings.
Ingredients:
- 8-10 baking apples
- 1/4 tsp stevia powder
- 1 tsp cinnamon
- 1/4 tsp sea salt
- 1 1/2 c low fat vegetarian baking mix (such as Heart Smart Bisquick)
- 1/2 c brown sugar
- 1 c quick oats
- 1 tsp vanilla
- 1 c orange juice
Directions:
- Preheat oven to 375 dgrees F.
- Peel and core the apples. Cut them in thin slices and place them in a large bowl.
- Sprinkle with the stevia, cinnamon and salt. Mix very well and spread evenly in the bottom of a 13 x 9 x 2 inch baking dish.
- In the same large bowl, mix the remaining ingredients until well-blended.
- Pour evenly over the apples. Use the back of a spoon to further spread it around. (The batter may not cover all the apples, but it will fill in as it bakes.)
- Bake 40 minutes or until the top is golden brown.
- Allow to stand 10 minutes before cutting into 10 servings.
- Serve warm or cold.
