Ingredients:
Peaches and Batter
- 4 c peaches (firm, ripe)
- 1 Tbsp corn starch
- 1/3 c water
- 1 c sugar (divided use)
- 1 Tbsp butter
- 1 c all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 c vegetable shortening, melted
- 1/2 c milk
Topping:
- 2 Tbsp sugar
- 1/2 tsp cinnamon
Directions:
Peaches and Batter
- Peel and slice the peaches. Place them in a medium saucepan.
- Add corn starch, water and 1/2 cup of the sugar. Cook over medium heat until thick and bubbly.
- Stir in the butter and place the peaches in a greased 8 x 8 inch or 9 x 9 inch baking dish.
- Preheat oven to 350 degrees F.
- Into a large bowl, sift the remaining 1/2 cup sugar, flour, baking powder, and salt.
- Add the melted shortening and milk. Stir until combined.
- Spoon batter evenly over the peaches. (May not fully cover the peaches.)
Topping and Baking:
- Blend together the sugar and cinnamon.
- Sprinkle topping evenly over the top.
- Place dish on a baking sheet to catch drips and bake in center oven 30 minutes.
- Cool briefly. Serve with whipped cream if desired.
