This quick and easy stove-top meal is perfect for a busy family. Children will love this nutritious dish!
Serves 6.
Ingredients:
- 1 Tbsp butter or margarine
- 1 small onion, chopped
- 4 vegetarian wieners, sliced
- 1 (14-15 oz) can diced tomatoes with juice
- 1 c tomato juice
- 1 c water
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 tsp dry marjoram
- 1/4 tsp dry basil
- 4 oz dry elbow macaroni
- 1 bell pepper, cut in strips
Directions:
- In a large skillet over medium heat, melt the butter and add onion. Sauté 3 minutes.
- Add veggie dogs, diced tomatoes with their juice, tomato juice, water, garlic, salt, pepper, marjoram, and basil. Bring to a boil.
- Add elbow macaroni and stir. Reduce heat, cover, and simmer on low for 10 minutes, stirring once midway.
- Stir. Add bell pepper strips. Cover and simmer another 3 minutes. Serve hot.
