Many recipes that call for chicken can be readily converted to vegetarian recipes through the substitution of “chicken” seitan. Here is an easy, baked seitan recipe that is loaded with wheat protein. Try it in your favorite recipes.
Makes (1) 6-8 inch roll.
Ingredients:
- 2 c vital wheat gluten
- 1 Tbsp poultry seasoning
- 1 Tbsp vegetarian chicken style broth mix
- 1 Tbsp dry parsley
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 2 c water
- 2 Tbsp vegetable oil
Directions:
- Preheat oven to 325.
- In a large mixing bowl, mix dry ingredients.
- Add water and oil. Mix well, then knead for a minute or two.
- Form into a neat log (6-8″ long), wrap tightly in foil, twisting ends. Bake for 90 minutes directly on oven rack. When finished baking, unwrap and leave out to cool completely. Wrap the cooled roll in foil or plastic and refrigerate. Slice or chop as desired. (Roll will keep a week refrigerated and a month or more in the freezer.)
