Cooking bananas right into the French toast batter lends a flavorful note to a favorite breakfast treat. Some grilled veggie sausages will make this breakfast extra special!
Serves 2.
Ingredients:
- 2 bananas (divided use)
- 1 egg
- 1/2 c milk
- 4 medium slices white or French bread
- 1 Tbsp butter
Directions:
- In a shallow dish such as a pie plate, mash 1 of the bananas well with a fork. Add the egg and milk; beat until well-incorporated.
- Heat half of the butter in a large skillet over medium low heat.
- Dip 2 slices of bread in the batter, coating both sides. Fry about 2 minutes on each side, or until golden brown.
- Repeat with the remaining butter and battered bread. Slice the other banana and serve on top with a bit of honey or maple syrup.
