Serves 4.
Ingredients:
- 1 long English cucumber
- 8 radishes
- 1/4 c parsley
- 1 tbsp olive oil
- 1 Tbsp seasoned rice vinegar
Directions:
- Leaving the peel on, cut the cucumber in 1/8 inch slices. Trim the radishes, and slice them at 1/8 inch.
- Finely chop the parsley.
- Place the cucumber, radishes, and parsley in a large bowl.
- Pour on the olive oil and toss until everything is coated.
- Add the rice vinegar and toss again. Serve at once, or refrigerate and serve within 2 days.
