Cucumber Radish Salad

Serves 4.


  • 1 long English cucumber
  • 8 radishes
  • 1/4 c parsley
  • 1 tbsp olive oil
  • 1 Tbsp seasoned rice vinegar


  1. Leaving the peel on, cut the cucumber in 1/8 inch slices. Trim the radishes, and slice them at 1/8 inch.
  2. Finely chop the parsley.
  3. Place the cucumber, radishes, and parsley in a large bowl.
  4. Pour on the olive oil and toss until everything is coated.
  5. Add the rice vinegar and toss again. Serve at once, or refrigerate and serve within 2 days.
