Companion Foods makes a number of tasty protein products for vegetarians. An inexpensive and delicious basis for a vegetarian meal is their Assorted Delights with Quail Eggs, also known as Assorted Vegetables with Quail Eggs.
Serves 4.
Ingredients:
- 3 medium potatoes
- 2 large carrots
- 2 stalks celery
- 1-10 oz can Companion Assorted Delights with Quail Eggs
- 1-.70 oz packet Mayacama’s vegetarian chicken flavored Gravy Mix
- 1 medium onion
- 1 Tbsp margarine or butter
- 1 tsp poultry seasoning
- 1 bay leaf
Directions:
- Peel the potatoes and carrots and cut into bite-sized pieces.
- Cut the celery into bite-sized chunks.
- Place the potatoes, carrots, celery, and Companion Assorted Delights with Quail Eggs (including liquid) in a medium pot.
- In a small bowl, dissolve the gravy mix in a cup of water. Add it to the pot and add enough additional water to barely cover the vegetables.
- Peel the onion and remove the top and bottom ends. Cut the onion in half crosswise, and cut into large wedges.
- In a small skillet, heat the margarine over medium low heat and add the onion wedges.
- Saute 4 minutes or so, and add the poultry seasoning. Saute another minute.
- Add this mixture to the pot and blend well.
- Place the pot on medium heat, stirring frequently, until it reaches simmering.
- Cover and turn heat down to low.
- Simmer about 15 minutes or until the potatoes are just tender. Serve hot.
