Roasted Garlic and Peanut Vinaigrette

This is a light vinaigrette with some interesting flavor tones from the roasted garlic and peanut butter. Salads with this dressing are especially good with a sprinkle of peanuts on top.

Makes about 1 1/4 cups.

Ingredients:

  • 1 small head garlic
  • 1/2 c olive oil
  • 2 Tbsp lime juice
  • 2 Tbsp distilled white vinegar
  • 2 Tbsp water
  • 2 Tbsp peanut butter
  • 1 tsp prepared mustard
  • 3/4 tsp salt
  • 1/8 tsp pepper

Directions:

  1. Cut the top of the garlic head off. Bundle in tin foil, and roast for 45 minutes at 400 degrees F. Cool enough to handle. Squeeze cloves of garlic into a medium bowl and mash them until smooth.
  2. Add remaining ingredients to the bowl and beat with a whisk until well-incorporated. Drizzle over salad and serve with a sprinkling of peanuts or sunflower seeds.
