If you have run out of enchilada sauce, as I did recently, or you just want a better tasting sauce than store-bought varieties, try this easy, quick version. It will make your enchiladas taste spectacular!
Makes about 4 cups.
Ingredients:
- 2 Tbsp vegetable oil
- 2 Tbsp all-purpose flour
- 2 Tbsp chili powder
- 1/2 tsp ground cumin
- 2 c tomato sauce
- 2 c water
- 1/4 tsp garlic powder
- 1 Tbsp dry cilantro
- 1 Tbsp butter
Directions:
- Heat oil in large 2-quart saucepan over medium low heat.
- Stir in flour, chili powder, and cumin; cook for 1 minute, stirring constantly.
- Add tomato sauce, water, and garlic powder; bring to a boil and simmer for about 10 minutes.
- Add cilantro and butter. Use in your favorite recipes.
