Makes about 1 cup.
Ingredients:
- 1/4 c cashews
- 1/4 c water
- 3 Tbsp olive oil
- 2 Tbsp prepared Dijon mustard
- 1 Tbsp fresh lemon juice
- 1 Tbsp honey
- 1-2 cloves garlic, minced
- 1 Tbsp whole cumin seeds
- 1 tsp ground cardamom
- 1/2 tsp salt
- 1/4 tsp black pepper
Directions:
- Place all ingredients in an electric blender and process until well incorporated.
- Pour on vegetable salads. Refrigerate any unused portion for up to a week.
