Far superior in flavor and texture to the canned variety, fresh raw beets, are sweet and delicious. They make a nice change from everyday salad fixings.
Serves 6.
Ingredients:
Salad:
- 3 raw beets
- 6 c iceberg lettuce
- 1 bunch radishes
Creamy Italian Dressing
- 1/2 cup olive oil
- 1/4 c sour cream
- 2 Tbsp red wine vinegar
- 1 Tbsp freshly squeezed lemon juice
- 1 clove garlic, minced
- 1 tsp Italian seasoning
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
Directions:
Salad:
- Peel and shred the beets on a box grater.
- Break the washed lettuce into bite sized pieces.
- Trim the radishes and shred them on the box grater.
- Place a cup or so of lettuce in each salad bowl.
- Place a small mound of shredded beets on one side of each salad, and a mound of shredded radishes on the other side.
- Pour the Creamy Italian Dressing (recipe follows) down the middle of each salad.
Creamy Italian Dressing
- Put all ingredients in a blender or food processor and process until smooth and creamy.
- Serve on any raw vegetable salad.
