Radish Beet Salad with Creamy Italian Dressing Far superior in flavor and texture to the canned variety, fresh raw beets, are sweet and delicious. They make a nice change from everyday salad fixings.

Serves 6.



  • 3 raw beets
  • 6 c iceberg lettuce
  • 1 bunch radishes

Creamy Italian Dressing

  • 1/2 cup olive oil
  • 1/4 c sour cream
  • 2 Tbsp red wine vinegar
  • 1 Tbsp freshly squeezed lemon juice
  • 1 clove garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper



  1. Peel and shred the beets on a box grater.
  2. Break the washed lettuce into bite sized pieces.
  3. Trim the radishes and shred them on the box grater.
  4. Place a cup or so of lettuce in each salad bowl.
  5. Place a small mound of shredded beets on one side of each salad, and a mound of shredded radishes on the other side.
  6. Pour the Creamy Italian Dressing (recipe follows) down the middle of each salad.

Creamy Italian Dressing

  1. Put all ingredients in a blender or food processor and process until smooth and creamy.
  2. Serve on any raw vegetable salad.
