Mango Waldorf Salad

I bought a box of mangoes at a roadside stand the other day, and have found many ways to use them. Later this week, I will be posting my recipe for Mango Jam. Delicious! Mango Waldorf Salad

Serves 4.

Ingredients:

  • 2 large mangoes
  • 2 bananas
  • 1/2 c pecan halves
  • 2 stalks celery
  • 2 Tbsp mayonnaise
  • 1 Tbsp honey
  • 1/4 tsp poppy seeds

Directions:

  1. Use a paring knife to peel the mangoes. Cut scallops off the sides, just deep enough to skim the pit. Cut each scallop into strips, and then dice them. Place them in a large bowl.
  2. Slice the bananas and celery.
  3. Cut the pecan halves in half again. Add them and the bananas and celery to the bowl.
  4. In a small bowl, blend the mayonnaise, honey and poppy seeds until well-incorporated. Add the bowl and toss well. Cover and chill until served.
