This egg salad calls for Greek yogurt in place of the usual mayonnaise, so it is light in flavor and calories. The zucchini makes a nice change from celery and onion.
Makes 4 large sandwiches.
Ingredients:
- 6 large eggs, hard cooked
- 1 small zucchini
- 2 Tbsp Greek style yogurt
- 1 tsp fresh lemon juice
- 1/2 tsp dry dill
- 1/2 tsp dry mint
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp white pepper
- 8 slices whole grain bread
Directions:
- Using a box shredder, shred the eggs and zucchini.
- Place the eggs and zucchini in a large bowl and add the yogurt, dill, mint, onion powder, salt, and white pepper.
- Spread on the whole grain bread and serve the sandwiches with dill pickles and tomato slices.
