Zucchini Egg Salad Sandwiches This egg salad calls for Greek yogurt in place of the usual mayonnaise, so it is light in flavor and calories. The zucchini makes a nice change from celery and onion.

Makes 4 large sandwiches.


  • 6 large eggs, hard cooked
  • 1 small zucchini
  • 2 Tbsp Greek style yogurt
  • 1 tsp fresh lemon juice
  • 1/2 tsp dry dill
  • 1/2 tsp dry mint
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 8 slices whole grain bread


  1. Using a box shredder, shred the eggs and zucchini.
  2. Place the eggs and zucchini in a large bowl and add the yogurt, dill, mint, onion powder, salt, and white pepper.
  3. Spread on the whole grain bread and serve the sandwiches with dill pickles and tomato slices.
