This rich French Canadian dish is a real taste treat. Traditionally, it is made with plain cheese curds. If you cannot find them in your market, use pepper jack cheese, broken into curds.

Ingredients:
Main Dish:
- 1 pound frozen French fries
- 4 oz cheese curds or pepper jack cheese
- 1 recipe for Vegetarian “Swiss Chalet Sauce” (below)
Sauce:
- 3 c water
- 1/4 c ketchup
- 1 Tbsp chicken style broth mix (such as Chik’Nish)
- 2 tsp molasses
- 1 tsp vegetarian Worcestershire sauce
- 1 1/2 tsp paprika
- 1 tsp poultry seasoning
- 1/4 tsp ground ginger
- 1/4 tsp dried mustard
- 1/4 tsp onion powder
- 1/4 tsp ground red pepper
- 2 tsp lemon juice
- 1 tbsp cornstarch
Directions:
- Cook the French fries according to package directions. Prepare the cheese curds.
- To make the sauce, place a medium saucepan over medium low heat; add water and ketchup. Add broth mix, molasses, Worcestershire sauce, paprika, poultry seasoning, ginger, mustard, onion powder, and red pepper. Stir with a whisk until boiling. Reduce heat and simmer 5 minutes. Stir in lemon juice. Mix cornstarch with 1 tbsp water; stir into sauce. Cook, stirring constantly until sauce thickens.
- Plate the fries and sprinkle the cheese on top. Spoon a generous amount of sauce on each serving.
