This is an easy one-dish meal that is hearty and may be made for vegetarians or vegans.
Serves 4.
Ingredients:
- 1-20 oz can vegetarian chili
- 1/2 c chopped onion
- 1 medium tomato, chopped
- 1 serrano pepper, seeded and minced
- 2 Tbsp fresh minced cilantro
- 1 clove garlic, minced
- dash salt and pepper
- 4 c golden potatoes, thinly sliced
Directions:
- Preheat oven to 350 degrees F and oil a 2 quart baking pan.
- In a large bowl, blend together the chili, onion, tomato, serrano pepper, cilantro, garlic, salt and pepper.
- Spread 1/4 of the chili mixture in the bottom of the prepared pan. Add 1/3 of the potatoes on top in an even layer. Repeat twice. Spread remaining chili on top.
- Cover tightly with foil and bake 60-75 minutes or until potatoes are tender. Serve hot with a dollop of sour cream.
