This is a great low carbohydrate recipe that is loaded with flavor. Feel free to use the low fat version of FriChik or any similar chicken-like substitute.
Serves 2-4.
Ingredients:
- 2 Tbsp butter
- 4 c small broccoli florets (cut large ones in 2 or 3 pieces)
- 1 clove garlic, minced
- 3/4 c milk
- 1 (12.5 oz) can Loma LInda FriChik. drained, sliced
- 3/4 c melting cheese. shredded
- 1/4 c Parmesan cheese, grated
- dash pepper
Directions:
- In large skillet over medium heat, melt butter.
- Add broccoli. Sauté until stems are no longer white inside, about 4 minutes.
- Add garlic; sauté another 30 seconds.
- Add milk and FriChik; bring to simmer.
- Reduce heat to lowest setting, cover, and cook 3 minutes.
- Add melting cheese, Parmesan, and pepper. Stir until cheese is melted.
- Serve in shallow bowls with a little more cheese sprinkled on top (optional).
