Cheesy FriChik and Broccoli

This is a great low carbohydrate recipe that is loaded with flavor. Feel free to use the low fat version of FriChik or any similar chicken-like substitute.

Serves 2-4.

Ingredients:

  • 2 Tbsp butter
  • 4 c small broccoli florets (cut large ones in 2 or 3 pieces)
  • 1 clove garlic, minced
  • 3/4 c milk
  • 1 (12.5 oz) can Loma LInda FriChik. drained, sliced
  • 3/4 c melting cheese. shredded
  • 1/4 c Parmesan cheese, grated
  • dash pepper

Directions:

  1. In large skillet over medium heat, melt butter.
  2. Add broccoli. Sauté until stems are no longer white inside, about 4 minutes.
  3. Add garlic; sauté another 30 seconds.
  4. Add milk and FriChik; bring to simmer.
  5. Reduce heat to lowest setting, cover, and cook 3 minutes.
  6. Add melting cheese, Parmesan, and pepper. Stir until cheese is melted.
  7. Serve in shallow bowls with a little more cheese sprinkled on top (optional).
