Tiramisu is a luscious Italian dessert that is not as difficult to make as it may seem. I have cut the sugar in this recipe, and used a little honey to replace it.
Makes 9 servings.
Ingredients:
- 1 c strong, hot coffee
- 1/2 c honey (divided use)
- 1/4 c Kahlua coffee liqueur
- 1 1/2 c heavy cream
- 2 tsp vanilla
- 16 oz Mascarpone cheese, softened
- 7-8 oz Lady Fingers (Savoiardi)
- 1 Tbsp unsweetened cocoa powder
Directions:
- Place hot coffee in a small bowl. Add 1/4 cup of the honey; stir until dissolved. Stir in the Kahlua.
- Whip cream until soft peaks form, adding vanilla midway through the whipping process.
- In large bowl, soften Mascarpone. Add remaining 1/4 cup honey; blend thoroughly until no lumps or streaks are left.
- Fold the whipped cream into the Mascarpone.
- In an 8 x 8 x 2 inch pan or round 9 inch cake pan, place a layer of Lady Fingers, breaking as needed to completely cover bottom of pan.
- Pour half of the Kahlua mixture evenly over Lady Fingers.
- Spread half of the Mascarpone mixture on top in a smooth layer.
- Repeat layers once more: Lady Fingers, Kahlua mixture, Mascarpone mixture.
- Sprinkle with cocoa powder.
- Cover and refrigerate overnight or up to 24 hours.
- Cut with sharp knife, wiping knife between slices. Remove slices carefully.
