This creamy high protein pudding is great served with a dollop of non-fat Greek yogurt or whipped topping. We have kept the calories low by using stevia as a primary sweetener.
Serves 3-4.
Ingredients:
- 1 ripe banana
- (1) 12-16 oz block of extra firm tofu
- 1 c sliced strawberries
- 1/4 c unsweetened coconut milk
- 1/4-1/2 c water (enough to blend into thick pudding)
- 1 Tbsp sugar
- 1/8 tsp rum extract (or almond extract)
- pinch salt
- 15 drops liquid stevia (or to taste)
Directions:
- Place all ingredients in a blender and process until thick and creamy.
- Spoon into serving dishes and chill overnight. Serve with a garnish of mint leaves and a dollop of Greek yogurt or whipped topping.
