Strawberry Banana Tofu Pudding

Strawberry Banana Tofu PuddingThis creamy high protein pudding is great served with a dollop of non-fat Greek yogurt or whipped topping. We have kept the calories low by using stevia as a primary sweetener.

Serves 3-4.


  • 1 ripe banana
  • (1) 12-16 oz block of extra firm tofu
  • 1 c sliced strawberries
  • 1/4 c unsweetened coconut milk
  • 1/4-1/2 c water (enough to blend into thick pudding)
  • 1 Tbsp sugar
  • 1/8 tsp rum extract (or almond extract)
  • pinch salt
  • 15 drops liquid stevia (or to taste)


  1. Place all ingredients in a blender and process until thick and creamy.
  2. Spoon into serving dishes and chill overnight. Serve with a garnish of mint leaves and a dollop of Greek yogurt or whipped topping.
