This is a light and lovely dessert that is not hard on the waistline!
Serves 4.
Ingredients:
- 4 ripe, firm peaches (medium sized)
- 1/4 c maple syrup
- 1/4 c chopped raw pistachios
- 1 Tbsp butter
Directions:
- Preheat oven to 350 degrees F.
- Cut peaches in half and remove pits. Place them in a parchment lined baking pan, cut sides up.
- Pour a teaspoon of the maple syrup in each center. Sprinkle with pistachios.
- Dot the peaches with butter in the center.
- Bake 20 minutes. Remove and drizzle with the remaining maple syrup. Serve warm.
