Red bananas take longer to ripen than regular bananas and keep longer once ripe.The peels of the bananas will be almost purplish when the red bananas are ripe. The inside of the banana will have a lovely pale orange-red color. Serve this dish warm. For a special occasion it can served on top of coconut ice cream.
Makes 2-3 cups.
- 1 Tbsp lemon juice
- 1 Tbsp honey
- 1 Tbsp butter
- 4 ripe red bananas, sliced
- 2 Tbsp golden raisins
- dash of mace
- Combine lemon juice, honey, and butter in a small skillet over medium heat.
- When simmering, add bananas, raisins and mace.
- Saute a few minutes until hot and well blended.
- Remove to serving plate.
